Thyme & Apple Cider Spritz
A bright, low-proof long drink for warm evenings — dry sparkling cider, a splash of elderflower, and a sprig of thyme.

The spritz formula works wonderfully with cider: something bubbly, something floral, something sour, and lots of ice. Dry cider keeps it crisp instead of sugary.
Method
- Fill a tall glass with ice and tuck in two or three thin apple slices.
- Add the elderflower and lemon, then gently pour in the cider.
- Top with soda water and give it one slow stir from the bottom with a bar spoon.
- Slap the thyme sprig between your palms to wake it up, and drop it in.
Swaps
- No elderflower? Use 1/4 oz honey syrup and a dash of orange bitters.
- Zero-proof: sparkling non-alcoholic cider works great — skip the liqueur and use elderflower cordial.
- Herb swap: rosemary or sage both play well with apple.
