Small habits that make a big difference in the glass. Read them in thirty seconds, use them forever.

    Give Your Mulling Spices a Second Life

    Strained whole spices from a batch of mulled cider still have plenty to give. Simmer them with sugar and water for a spiced syrup.

    Combine the spent spices with 1 cup water and 1 cup sugar, simmer for 10 minutes, then strain and refrigerate for up to two weeks. Stir it into hot tea, drizzle on pancakes, or use it in an apple old fashioned.

    Don't Serve Good Cider Ice-Cold

    Fridge temperature mutes aroma. For craft and farmhouse ciders, aim for 45–50°F — pull the bottle out 15 minutes before pouring.

    Very cold temperatures suppress aroma and flavor. That's great for hiding flaws in mass-market ciders, but it hides the good stuff too. Crisp, light ciders can go colder; complex, tannic ciders shine a bit warmer.

    A Pinch of Salt Makes Cider Cocktails Pop

    Two drops of saline solution (or a tiny pinch of salt) brightens apple flavor and tames bitterness in any cider drink.

    Make a saline solution by dissolving 1 part salt in 4 parts warm water and keep it in a dropper bottle. Two drops per drink is plenty — you shouldn't taste salt, just more apple.

    Sanitize, Then Sanitize Again

    Nine out of ten failed homebrew batches come down to one thing. A no-rinse sanitizer in a spray bottle makes it painless.

    Clean first to remove visible residue, then sanitize every surface that touches juice: jug, funnel, airlock, spoon, siphon, bottles. Keep a spray bottle of no-rinse sanitizer on the counter for the whole session.
